I like to read cookbooks. I don't make most of the recipes, but it's fun to see how a seven-layer, chocolate and raspberry torte might be concocted, if I ever decide to make one. I've never made a cheese soufflé, or rolled a pie crust, or prepared a standing-rib roast. But I've read all about those dishes. I've followed the instructions, step-by-step, and imagined myself pulling a perfectly enormous soufflé from the oven, or a brilliantly browned pie crust, or a succulent roast...
