Fast Eddie’s: The new food truck serving up pizzas at lightning speed

McCOOK, Neb. — There’s a new food truck in town and it lives up to its name, ‘Fast Eddie’s.’ Owned by Blaine and Ann Budke, Fast Eddie’s 10-inch pizzas are oven-baked within eight minutes and can be delivered out the window shortly after.

At the March 20 ribbon-cutting ceremony hosted by the McCook Chamber of Commerce, Blaine Budke said the truck was built to exact specifications, with brand-new equipment from top to bottom, including refrigerators, a pizza press, ovens, and a cooler. “This has been a group effort and we’re really excited about it,” Budke said.

Budke said it was challenging at first for he and his cook, Ryan Lucas, to figure out the right amount of dough to prepare the night before, but now they’ve got it down to a science and can make about 120 pizzas in two hours. Of a recent event, Budke said “There were a lot of pizzas flying out the windows.”

All pizzas are priced at $10 and customers can choose from Meat Lovers, supreme, hamburger or pepperoni.

Fast Eddie’s is already being booked for events, including the Freedom Fest, Culbertson Fourth of July, McCook Chamber of Commerce events and Medicine Creek Days. Budke said they would take the food truck within a 60-mile radius of McCook.

Budke said although the name ‘Fast Eddie’s’ didn’t originally have any special significance, he later realized it could be a nod to his father, Ed, who ran the long-time McCook motorcycle dealership, Big Ed’s Bike Barn.
