Sara told the students that since January, the restaurant’s dishwasher has washed 177,000 loads of dishes. They air-dry the dishes, she said, to prevent bacteria from growing between wet stacked dishes. A multiple-step method of proper hand washing, a freezer set at -5 degrees and a walk-in cooler maintained at 34-36 degrees also ensure food safety, she said. Sara told students she has three rules for visitors to the kitchen: Don’t touch the deep fryer, the food or the oven. Students were treated to the pizzas they made.
