'The Scoop' serves up community spirit along with ice cream
McCOOK, Neb. — Owners of a highly-anticipated new business hope to create a friendly community gathering place, and what better way to do so than around a bowl of ice cream?
Darcy Rambali said he originally thought about opening a coffee shop, but the concept eventually “melted” into a wide variety of ice cream flavors.
“We believe in people getting together and just enjoying themselves, and we thought this would be a great thing to start,” he said.
The “we” is Darcy, a native of Guyana in South America, and his wife, Travi, whom he met while they were both serving in the 82nd Airborne in the U.S. Army.
He retired after 20 years in the Army, and they then moved to McCook in 2009, where he now serves on the City Council.
They have four grown children and one grandchild and are active in their church and other community efforts.
After Tuesday’s official opening at noon, the ice cream shop, 305 West 10th, will be open Wednesday through Saturday from noon to 10 and Sunday’s 1 to 7 p.m.
