Quiche approved as both brunch and family event

I saw the Crustless Quiche recipe and knew right away it was going on the weekend menu page. Declan had an absolute blast "helping" me cook it earlier this week, as I found myself unable to wait until Easter weekend to try it out. We substituted turkey sausage for the smoked sausage and did not regret it one bit.
The look of excitement on his face, when I informed he could crack the eggs, was priceless. We did have to fish out quite a few shell pieces initially, but by the tenth egg or so he was a professional egg cracker and quite proud of it. As he added the last egg he brushed his hands together, as if he were simply knocking some dust off. Not realizing that, to my dismay, he was smearing egg yolk all over himself. Before I could finish my inhale and begin my speech on cooking cleanliness, he looked up and said "I'm a great cooker, huh, Dad?" I could do nothing but smile, of course agree and quietly wipe his hands with a washcloth as I chuckled.
