Enhanced Eggs
While I was attempting to find a title for this week's blog, this one struck me a tad funny. A person could decidedly take this a couple of ways.
However, I am going with the more mundane of subjects - chicken eggs - and cooking them my way.
This is one of those random topics. Since the nest is literally empty except for hubby and myself, I find there are several meals that I have to cook for just me.
I have learned skillets are not evil things. I have become a fan of my cast iron skillets. (Yes plural - I have more than one.) And a person does have to pay attention to not washing away the seasoning of the skillets. Nope these are not dishwasher safe.
Currently the trend for the lone meal is to cook - "enhanced" eggs. Let me clarify. Eggs are a relatively inexpensive meal. I did not grow up liking eggs. In fact - while I would eat scrambled eggs, the only other way I really liked them was - soft boiled over fried potatoes. (Okay I know my kids are saying - GROSS.)
Enhanced means to me- you cut up some onion, a garlic clove, whatever vegetables are left over, whatever meat is left over and throw them in the skillet with a bit of butter over medium heat. You glossy up the vegetables and heat the meat through - scooting them to the side. Then you get some eggs, the big decision is whether you fry them or scramble them. I add sea salt and ground pepper. I really like those little grinders you can get at the grocery store. I may add some curry or coriander to the eggs and cook them through.
Sometimes the enhanced eggs will be wrapped in a torilla for a mid day breakfast-type burrito. If I have salsa or picante sauce, it might get added. But more often than not, they are put in a plate or bowl depending on the variety of the egg. Bowls are much better for the scrambled variety - at least for me.
My hubby is NOT an egg fan at all, however, he has figured out that if he wants to eat of a weekend morning, he will consume the scrambled variety if that is what is on the menu.
Now, please do not take this blog entry to mean I am any kind of 'eggs-pert'. Oh quite the contrary. I have said for a very long time - I am domestically challenged. Cooking is a struggle, decorating sucks, and sewing - I am just not capable. However, I am learning to take my little victories in the culinary arts and celebrate them however mundane they may be.
